Chocolate & Peanut Granola

This is a recipe from one of my favorite Cooking Channel cooks - Nigella Lawson

Of course you can make it without the cocoa, but I think it would be fun and you can control the sweetness to taste, after all cocoa powder has no sugar in it.  And, I love the fact that you use applesauce to replace a lot of the oil/fat in this recipe.

Chocolate & Peanut Granola


Prep Time:  10 minutes
Baking Time:  1 hour
Servings:  makes 10 cups
Level:  Easy Peasy
Preheat oven to 310 degrees F.

Ingredients:

1/4 cup best quality cocoa powder
4 1/2 cups rolled oats
1 cup sunflower seeds (raw - or gently toast if you prefer)
3/4 cup white sesame seeds (raw - or gently toast if you prefer)
3/4 cup applesauce
2 teaspoons ground cinnamon
1 teaspoons ground ginger
1/3 cup brown rice syrup or rice malt syrup (found in the natural foods section of the grocery store)
1/4 cup clover honey or other runny honey
3/4 cup light brown sugar
2 cups raw peanuts
1 teaspoons kosher salt
2 tablespoons canola oil or sunflower oil

Directions:

Preheat oven to 310 degrees F.
Mix everything together very well in a large mixing bowl.  Spread the misture evenly on 2 large baking sheets and bake for 40 minutes to 1 hour, turning over the mixture half-way through the baking time.  Allow to cool completely before storing in air-tight containers.

Now... for a tea suggestion with this recipe.... well, my first inclination is to have Irish Breakfast for a hearty black tea complement, but I also think that Vanilla Almond or Consider the Coconut would be incredible.  In my opinion everything goes well with chocolate!
